Château de Sauvage 2021
is developed from 85% of Merlot and 15% of Cabernet Sauvignon grown in biological farming on clay and gravel soils.
The grapes are harvested manuallysorted, completely de-stemmed and sent to fermentation alcoholic and then malolactic.
The wine is then aged on the lees in oak barrel French at 30% new for 1 year then bottled with light filtration.
The Château de Sauvage Rouge has a lovely ruby colour with garnet hues, the nose is harmonious The wine has a rich aroma of red fruits. On the palate, it is fine with light notes of red berriessmoky notes with fine tannins and round.
It will be enjoyed between 2021 and 2025 with, for example, flank steak with shallots, roast pork, blanquette of veal or poultry.
The Château de Sauvage is located in Landiras in the south of the Graves, it is owned by Vincent Dubourg since 2004. When he arrived, he built a cellar and since then he has been working the vines (7.5 ha) in the middle of the woods without any herbicides or insecticides.
The estate obtained the organic certification from 2020.
