Aplo is one of Chloe Chatzivaritis' 3 natural cuvées, made from organic Assyrtiko grapes. The grapes are meticulously hand-picked, pressed, and then sent to cold pre-fermentation for 2 days before spontaneous fermentation from indigenous yeasts in old French oak barrels of at least 6 wines. After fermentation, the wine will remain in the same barrels for 3 months and then 6 months in the bottle before release.

Aplo reveals intense notes of citrus, white fruits, white flowers and some honeyed notes. On the palate, it is full-bodied with a nice roundness and a slight acidity that awakens the taste buds.

With its beautiful structure, it will accompany Asian dishes with lots of sweet spices.

The Chatzivaritis estate has 12 hectares of organic vineyards in northern Greece and offers a range of wines made mainly from endemic Greek grape varieties: Xinomavro, Roditis, Negoska, Assyrtiko! It all started with love... when Vagelis Chatzivaritis met his future wife Olga Iakovidou in 1981. She was from Goumenissa, a place with a long tradition of wine production. Being a wine lover himself and a man who also appreciated gastronomy and the simple pleasures of life, he started to make his own wine, to be enjoyed in the company of his good friends and close relatives. The local narrative says that the indigenous Greek varieties of Xinomavro and Negoska from which P.D.O. Goumenissa Chatzivaritis is produced, was the wine of choice of Philip, King of Macedonia, father of Alexander the Great
