Laieta is a Cava made from a blend of indigenous grape varieties with Pansa Blanc and Macabeu and Champagne varieties, Chardonnay and Pinot Noir. For these exceptional cuvées, the harvest is manual and selective in order to keep only the best grapes. The grapes are then very lightly pressed to avoid the colouring of the Pinot Noir and the fermentation is carried out at 15°C, variety by variety. The second fermentation takes place in the bottle according to the traditional method, before an ageing period of at least 30 months on laths, it is disgorged only on order.
The nose reveals aromas of white fruits harmoniously blended with floral aromas and subtle notes of red fruits and fresh almonds. The palate is smooth, fresh and fruity. The bubble is fine and elegant, this cava is structured without losing any of its freshness, it is persistent and tasty. It has nothing to envy to the wines of Champagne!
Alta Alella is the culmination of a family project by Josep Maria Pujol-Busquets and Cristina Guillén Soldevila, which began more than 20 years ago and is located between the villages of Tiana and Alella, in the middle of the privileged agricultural area of the Serralada de Marina Natural Park. The vineyards overlook the Mediterranean Sea, which is less than 2 kilometres away, and have been farmed organically since Josep Maria arrived, with the aim of producing transparent wines where the authentic expression of the terroir and climate is reflected in each of their wines. Today the estate covers 50 hectares with typical and even forgotten grape varieties of the region.
