Bourgogne Chardonnay is made from Chardonnay from the limestone soils of the Côte de Beaune. The whole bunches of grapes are pressed directly after the harvest, followed by a static settling for 48 hours. Alcoholic fermentation can then begin in oak barrels, 15% of which are new, using indigenous yeasts. The wine will remain there on fine lees for 20 months.
This Burgundy Chardonnay deserves to be opened early to let it reveal its delicate notes of orange blossom, lemon and honey. The limestone soils have given it a lot of freshness and a light minerality, the maturing in barrels is well integrated, bringing delicate and greedy notes of butter and toast.
The Château de Pommard contains more than 300 years of history and know-how. Today it is in the hands of the Carabello-Baum family, determined to convert the entire estate to biodynamic agriculture in order to reveal the expression of this exceptional terroir.
