is made from 50% Syrah, 25% Carignan and 25% Grenache grown on of soils of magnesian schist, ferruginous schist, clay-ferruginous and clay-limestone, reflecting the richness of the different terroirs of the Guillaume estate.
The vines are all organically grown, of course, and naturally have low yields, thus concentrating all the aromas. After manual harvesting, the grapes are vinified variety by variety, terroir by terroir in small concrete vats.
Château Les Hauts de Dernacueillette is aged between 22 and 26 months in vats to preserve all the richness and freshness of the grapes. It is one of the estate's "top-of-the-range" cuvées.
It develops aromas of citrus, blood orange and mineral notes. The palate is round, full and fruity, with blood orange at the beginning and ripe red fruit and white pepper notes at the end.
Let's taste it on a tuna tataki just snacked, my mouth is watering!
Château Les Hauts de Dernacueillette takes its name from the land that belonged to the Château de Dernacueillette. This beautiful building, on a mound in the heart of the village, built on natural foundations.

The parcels are located in the Termenes area, in the high Corbières, behind the Tauch mountain. With its 996 m of altitude it is one of the highest mountains in the Corbières.
These heights protect the vineyard from the sea and create a continental climate that brings a lot of freshness to the wines.
This area of high dry mountains benefits from a unique climate in Europe, called climatic shadow, which provides the vineyard with ideal conditions for the ripening of the grapes.
The vineyard has a naturally limited yield (15-20 hectolitres/ha), but all the ingredients are present for the fruit to express itself fully. Carignan, Syrah and Grenache are the three musketeer grape varieties of the Domaine de Dernacueillette vineyard.
