Aleph is a cuvee made from 60% Syrah and 40% Grenache high in biodynamics on sand-lime sandstone.
After the harvest, the grapes are fermented in stainless steel tanks only from their natural yeasts then only 30% of the wine is aged in oak barrels of 4 to 5 wines bringing a little structure and tannins but keeping the freshness of the 70% aged in stainless steel tanks.
