SPIN

is a vintage of 100% Negoska grown organically in Plagia on sandy-clay soils and harvested at two different dates, one early and one late.

The grapes are carefully selected by hand and crushed before being put into spontaneous fermentation in stainless steel tanks, without additives.

The early harvest undergoes a 5-day skin maceration while the late harvest undergoes a 3 week maceration.

After fermentation, the skins are lightly pressed and the wine is aged in separate French oak barrels for a further 4 months.

After ageing, the two harvests are blended and the wine is bottled without fining or filtration with a very small dose of sulphite. It will remain in the bottle for one year before being marketed.

SPIN has an intense red colour with purple hues and a slight cloudiness. The bouquet is composed of black cherries, red berries, liquorice, vanilla, spices and green pepper.

The palate is full-bodied and structured with good tannins, balanced acidity and a long finish.

The Chatzivaritis estate has 12 hectares of organic vineyards in northern Greece and offers a range of wines made mainly from endemic Greek grape varieties: Xinomavro, Roditis, Negoska, Assyrtiko!

It all started with love... when Vagelis Chatzivaritis met his future wife Olga Iakovidou in 1981. She was from Goumenissa, a place with a long tradition of winemaking.

As a wine lover himself and a man who also appreciated gastronomy and the simple pleasures of life, he began to make his own wine, to be enjoyed in the company of his good friends and close relatives.

The local story goes that the indigenous Greek varieties of Xinomavro and Negoska from which Goumenissa Chatzivaritis P.D.O. is produced, was the wine of choice of Philip, King of Macedonia, father of Alexander the Great
