Plisun is a cuvée made from organic grapes from Bussanello, the 3 brothers are the only ones to use it as a single grape variety, they are harvested by hand, sent for 24 hours in cold maceration and then pre-fermentation with the skins, followed by fermentation with indigenous yeasts, an aging of 8 months in stainless steel tanks.
Plisun reveals a delicate nose with floral, jasmine and mineral notes. The palate is structured, with pronounced notes of lemon and slightly salty in the finish. Lots of freshness and character at the same time!
The Crotin 1897 estate is located a few kilometres from Asti in the commune of Maretto, on the heights of Monferrato in Piedmont. All the vines are cultivated in certified organic agriculture, the only treatments allowed are copper and sulphur based, so clearly no weeding and no chemical fertilization, the fertility of the soil is guaranteed by green manure and manure from their sheep.
In the winery, Corrado and Christian use only indigenous yeasts and very low sulphur dioxide dosages, and intervene as little as possible to allow each wine to find its own identity in a natural way while preserving the characteristics of the grapes as much as possible.
