Mirgin is a cava made from Pansa Blanca, Macabeu and Paralleda grapes harvested by hand at optimum maturity. The grapes are lightly pressed to obtain the first press juice, which is fermented separately for each variety. The second fermentation takes place in the bottle, according to the traditional method, and gives rise to an ageing on laths for a minimum of 30 months, after which it is disgorged on order only.
This cava reveals aromas of granny apple, citrus and fresh almond. It is light and fresh, with notes of white fruit and a hint of pastry due to the ageing on lees.
Alta Alella is the culmination of a family project by Josep Maria Pujol-Busquets and Cristina Guillén Soldevila, which began more than 20 years ago and is located between the villages of Tiana and Alella, in the middle of the privileged agricultural area of the Serralada de Marina Natural Park. The vineyards overlook the Mediterranean Sea, which is less than 2 kilometres away, and have been farmed organically since Josep Maria arrived, with the aim of producing transparent wines where the authentic expression of the terroir and climate is reflected in each of their wines. Today the estate covers 50 hectares with typical and even forgotten grape varieties of the region.
