Les Puys is from old vines Cabernet Franc planted on limestone soils on the hillsides of Chinon, in meticulous compliance with the principles of organic and biodynamic agriculture.
The Puys grapes are harvested manuallyThe grapes are de-stemmed, destemmed and then macerated for 30 to 40 days in wooden vats and then fermented only with indigenous yeasts. The wine is then aged for 24 months in large 50 hectolitre tuns before being bottled without fining or filtration.
The Puys reveal aromas of very ripe blackcurrant and the minerality of the limestone terroir. The mouth is tensefirm, revealing the beautiful maturity fruit and offers soft tannins and silky.
This wine will be a perfect match for powerful meats such as lamb, duck breast or roast beef. A half an hour of aeration will make it reveal all the intensity of its aromas.
Domaine Béatrice and Pascal Lambert - Cravant les Coteaux (37)
The Domaine de Béatrice et Pascal Lambert is located in Cravant les Coteaux, a few kilometres from Chinon in the Loire Valley. Anxious to respect the identities of the different terroirs as much as possible, the biodynamics has naturally imposed itself on the estate in order to create a harmony between the plant, its soil, and its environment. The estate now extends over 18 hectares in Cravant les Coteaux and Chinon where the emblematic grape varieties of the region are grown: the cabernet franc for reds and rosés and chenin for white people.
