Alain doesn't stop at the traditional viticultural and winemaking practices, he is constantly thinking about creating new processes and new potions, each one more ridiculous than the last, and each time it works, earning him the nickname of "Magician Winemaker".
The Mal'bec is one of Alain's sulfite-free cuvees, made from a large majority of Malbec and a hint of Cabernet Sauvignon just to add structure. Fermentation is done in whole berries, the juice is quickly run off as clear juice and then only a very short time will remain in the vat to be bottled early in order to keep a maximum of fruit. All this without any addition of sulphites!
