The Mal'bec is one of Alain's no added sulphite cuvées, made from a large majority of Malbec and a touch of Cabernet Sauvignon just to bring a little structure. Fermentations are done in whole berries, the juice is quickly run off in clear juice then it will remain only a very short time in tank to be bottled early to keep a maximum of fruits. All this without any added sulphites!
