The Domaine de Béatrice et Pascal Lambert is located in Cravant les Coteaux, a few kilometres from Chinon in the Loire Valley. Anxious to respect the identities of the different terroirs as much as possible, biodynamics has naturally imposed itself on the estate in order to create harmony between the plant, its soil and its environment. The estate now extends over 18 hectares in Cravant les Coteaux and Chinon where the emblematic grape varieties of the region are grown: Cabernet Franc for the reds and rosés and Chenin for the whites.
The La Croix Boissée cuvée is made from 50 to 60 year old Cabernet Franc vines planted on limestone terroirs in strict compliance with the principles of organic and biodynamic agriculture.
The grapes of La Croix Boissée are harvested by hand, destemmed and macerated for 30 to 40 days in wooden vats and then fermented only with indigenous yeasts. The wine is then aged for 24 months in 500-litre oak barrels before being bottled without fining or filtration.
La Croix Boissée reveals aromas of black fruits, coffee, undergrowth and delicate smoky notes. The mouth is powerful, with a lot of substance and roundness.
This wine will go wonderfully with rather powerful meat such as lamb, lamb casserole or roast beef. If it can be drunk now after a few hours, it will improve in your cellar for the next 10 years.
