Xavier Copel is a French oenologist from Cahors. His philosophy is to create a unique and long term partnership, with only one winemaker per appellation, owning his vineyard on the best terroirs of his appellation. He works carefully selected old vines and shares with the winemaker all the means and technical skills to vinify and mature the greatest wine possible.
The result is "haute couture" wines, complex, precise, fine and elegant, luxuriously aged and dressed.
Xavier Copel's Haut-Médoc 2016 comes from a strict plot selection of old vines of around 40 years old of Cabernet Sauvignon, Petit Verdot and Merlot, planted on gravelly black soils as found in the great appellation of Saint-Julien. The grapes are harvested by hand, then fermented in concrete vats for 30 days and finally matured in new barrels.
This wine expresses all the power of the Médoc wines with a beautiful complexity between black fruit, liquorice and violet aromas. On the palate, it reveals a certain freshness, lots of fruit with fine and elegant tannins.
It will reveal all its potential on rather powerful meats such as duck or lamb.
