Tanguy Perrault and Anne Cécile Jadaud are at the head of a small 4-hectare estate in Touraine. The couple naturally divides up the management of their vineyards located in Vouvray, Vernou sur Brenne and Noizay. Tanguy, then a teacher at the Amboise viticultural college, is involved in working the soil and the grapes. His wife, an oenologist advising the Touraine winegrowers, took the reins of the winemaking and wine trade. The estate is certified in organic agriculture, and the indigenous yeasts work on the alcoholic fermentation. The wines generally undergo tangential filtration before bottling and the sulphur doses are minimal (about 70mg/l).
The sparkling Vouvray Haut les Choeurs made from 100% of Chenin Blanc, is vinified according to the ancestral method with a vinification in vat and a resumption of fermentation in the bottle.
The wine is fresh, very refreshing, one finds there the minerality of the soil of Vouvray with a finish on fresh lemon and iodine.
A nice tight bubble that will perfectly accompany a scallop carpaccio or avocado crab.
