Loyal, an exceptional Blanc de Noirs champagne where the Pinot Noir is sublimated! The vines are obviously raised in boidynamics with low yields on Kimmeridgian soils (a succession of layers of marl, limestone and small oyster shells dating from the Jurassic period). The grapes are harvested by hand, vinified and aged for a long time in oak barrels without any dosage, fining or filtration. A Champagne yes, but above all a wine!
The bubbles are fine and lively, the mouth is vinous, we find the character of the Pinot Noir with notes of dried red berries. Greediness and freshness characterize this gastronomic Champagne which will fully express itself after a good half hour of opening.

Vouette & Sorbée is not the name of two winegrowers, but that of two parcels of vines. The winegrowers are Hélène and Bertrand Gautherot, who are no longer present among Champagne connoisseurs. Located in Buxière sur Arce, south of Troyes in the Aube, they are the pioneers of biodynamic agriculture in the region. They have at heart to nourish their land in order to find in their wines the expression of the Champagne terroir.
