Duende is a wine made from 100% Syrah grapes grown on a red clay terroir at an altitude of over 1000m and following the strictest principles of organic farming. The grapes are harvested by hand and then macerated as whole berries for 7 days before fermentation using indigenous yeasts, all in stainless steel vats only in order to preserve all the intensity and freshness of the grapes. No sulphur is added during vinification and bottling.
After working at Barranca Oscuro, former chef Ramon Saavedra decided in 1997 to create his own small estate on the heights of the small town of Graena in the northern Sierra Nevada. His 7.5 hectares of vineyards are perched at an altitude of over 1000m, enjoying significant temperature differences according to the season, and are all worked with the greatest respect for the environment. Ramon is committed to producing only wines made from 100 % grapes, and no inputs are used at any stage in the production of his wines.
