Duende is a cuvée made from 100% Syrah grapes grown on red clay soil at an altitude of over 1000m and following the strictest principles of organic farming. The grapes are harvested by hand and then macerated in whole berries for 7 days before fermentation using indigenous yeasts, all in stainless steel vats only in order to preserve all the intensity and freshness of the grapes. No sulphur is added during vinification and bottling.
After working at Barranca Oscuro, the former chef Ramon Saavedra decided in 1997 to create his small estate on the heights of the small town of Graena in the northern Sierra Nevada. Its 7.5 hectares of vines are perched at an altitude of over 1000m, enjoying significant differences in temperature according to the season, and are all worked with the utmost respect for the environment. Ramon has at heart to produce only wines made from 100% of grapes, no inputs are used at any time in the elaboration of its wines.
