This is the flagship wine of the estate, made from a complex assembly 65% Merlot, 35% Tannat, 5% Cabernet Sauvignon and 5% Cabernet Franc grown on clay-limestone soils. The grapes are picked and sorted by hand before being sent for fermentation in concrete tanks from indigenous yeasts.
This vintage reveals all the wealth and the complexity the terroir of the estate and above all the know-how of Philippe Cabrel ! From the nose, you can smell the concentrationwealth and wooded of wine. The tasting confirms this with its aromas of red berriess, the smoky notes and its fused tannins by maturing in barrels.
This great vintage is certainly a long-keeping wine that we will let improve in the cellar for some time. For the less patient, it will be necessary to decanter a good hour before tasting it on a dish with sauce.
Domaine du Boiron - Philippe & Francis Cabrel
The Domaine du Boiron is the family estate of Philippe and Francis Cabrellocated in Astaffort on the border between the Gers and Lot-et-Garonne in the Sud-Ouest. The Domaine covers 9.25 hectares of clay and limestone soil in the Brulhois region.
In the past, the Domaine du Boiron was known for its hundred hectares of vines. Unfortunately, time has taken its toll on the historic vineyard. In 1998, the estate was rehabilitated and returned to the culture of vines and wine.
