The Château de Côme is located in the commune of Saint-Estèphe in the Médoc. It is the only estate in the appellation to have obtained Organic Agriculture certification. Acquired in 1997 by Maurice Velge, Château de Côme is the realization of an old dream of its owner, a wine lover. His vision: to make a great wine on an excellent terroir with the same high standards as those reserved for the greatest growths of the Médoc. To achieve this, from the beginning of the adventure, he can count on the expertise of José Bueno, who has been a student at the Mouton-Rothschild school for 23 years. The estate, initially 2 ha in size, has grown over the years, with the acquisition of plots chosen on the basis of criteria of excellence, to reach a size of 7 ha today.
A great vintage of the estate, it is made from an equal blend of Merlot and Cabernet Sauvignon grown on clay-limestone soil. The harvest is manual and the vinification is done in temperature-controlled cement vats with a pre-fermentation cold maceration for 21 days. The wine is then aged for 12 to 14 months in 300hl barrels, 30% of which are new.
This cru bourgeois of Saint-Estèphe is endowed with more roundness and suppleness than the other wines of the appellation. It nevertheless remains dense with intense aromas of red fruits and woody notes. As it evolves, it also begins to develop very appreciable humus notes.
It will sit proudly in the middle of the table during a good Sunday meal with grilled red meat or well-prepared game.
