Jean-François and Marie Lespinasse are the owners of Château Bichon-Cassignols, located in the commune of La Brède, in the Graves on the edge of the Pessac-Léognan appellation. The château extends over 12.5 hectares of organically cultivated vineyards.
Made from 60% of Semillon and 40% of Sauvignon Blanc. Half of the wine is aged in stainless steel tanks and the other half in oak barrels for 6 to 8 months.
The Semillon gives the wine a good amplitude, as for the Sauvignon, it gives it freshness and liveliness. Its partial ageing in new barrels gives it length and subtlety and delicate woody notes. The stainless steel vat has enabled the aromas of fresh fruit (peach, pear) and white flowers to be preserved.
This great classic from Bordeaux will go quite easily with white meat, fish and seafood.
