Xavier Copel is a French oenologist from Cahors. His philosophy is to create a unique and long term partnership, with only one winemaker per appellation, owning his vineyard on the best terroirs of his appellation. He works carefully selected old vines and shares with the winemaker all the means and technical skills to vinify and mature the greatest wine possible.
The result is "haute couture" wines, complex, precise, fine and elegant, luxuriously aged and dressed.
Xavier Copel has returned to his native land of Cahors whose cuvée is the product of the perfect marriage of old Malbec vines with the remarkable terroirs of ancient gravel and clayey-limestone soils of the Lot valley. The grapes come from an organically farmed plot of land, they are hand-picked, then fermented directly in tuns to leave in vats for 30 days and finally slowly matured in new barrels.
We find here all the richness of Cahors wines with expressive aromas of blueberry, raspberry, liquorice and mint. On tasting, the ripe fruits burst forth on the palate accompanied by silky, coated tannins. A great finesse!
It will go marvellously with dishes as racy as it is, such as a rack of lamb or a good cassoulet from the South-West.
