Xavier Copel is a French oenologist from Cahors. His philosophy is to create a unique and long term partnership, with only one winemaker per appellation, owning his vineyard on the best terroirs of his appellation. He works carefully selected old vines and shares with the winemaker all the means and technical skills to vinify and mature the greatest wine possible.
The result is "haute couture" wines, complex, precise, fine and elegant, luxuriously aged and dressed.
Xavier Copel took the crazy gamble of vinifying dry grapes affected by "noble rot" of Semillon, he managed to "slap" the whole team with this wine. The plot of 65-year-old vines is planted on a remarkable clay-limestone terroir of the Sauternes appellation. The grapes are harvested by hand, and the fermentation and maturing process is carried out in new barrels.
We find the typical notes of Sauternes with its aromas of candied apricot, vine peach and citrus peel. A pastry touch underlines the whole. The mouth is dense, smooth, very aromatic, and offers a dazzling finish. All the aromas of a sweet wine but in a sublime dry wine!
