Aplo est l'une des 3 cuvées naturelles de Chloé Chatzivaritis, élaborée à partir de raisins biologiques d'Assyrtiko. Les grappes sont minutieusement récoltées à la main, pressées, puis envoyées en pre-fermentation à froid pendant 2 jours avant la fermentation spontanée à partir de levures indigènes dans des vieux fûts de chêne français d'au moins 6 vins. Après la fermentation, le vin restera dans ces mêmes barriques pendant 3 mois puis 6 mois en bouteille avant la commercialisation.

Aplo dévoile des notes intenses d'agrumes, de fruits blancs, de fleurs blanches et quelques notes mielleuses. En bouche, il est ample avec une belle rondeur et une légère acidité réveillant les papilles.

Avec se belle structure, il accompagnera des plats asiatiques avec beaucoup d'épices douces.

The Chatzivaritis estate owns 12 hectares of organic vineyard in the north of Greece and offers a range of wines made mainly from grape varieties endemic to Greece: Xinomavro, Roditis, Negoska, Assyrtiko! It all started with love... when Vagelis Chatzivaritis met his future wife Olga Iakovidou in 1981. She was originally from Goumenissa, a place with a long wine-growing tradition. Being himself a wine lover and a man who also enjoyed gastronomy and the simple pleasures of life, he began to make his own wine, enjoying the company of his good friends and close relatives. The local narrative says that the indigenous Greek varieties of Xinomavro and Negoska, from which the P.D.O. Goumenissa Chatzivaritis is produced, was the wine of choice of Philip, King of Macedonia, father of Alexander the Great.
