Aleph is a cuvee made from 60% Syrah and 40% Grenache high in biodynamics on sand-lime sandstone.
After the harvest, the grapes are fermented in stainless steel tanks only from their natural yeasts then only 30% of the wine is aged in oak barrels of 4 to 5 wines bringing a little structure and tannins but keeping the freshness of the 70% aged in stainless steel tanks.
Aleph tient son nom de la 1ère lettre de l'Phoenician alphabet, le A qui signifiait bœuf et la lettre à l'envers dépeignait les cornes des bœufs gras des bouchers qui défilaient pendant le carnaval.
Aleph reveals intense aromas of black fruitsblackcurrant, blackcurrant, garrigue, black olive and a few chocolate notes.
In the mouth, it is full and deep, balanced with freshness and very silky tannins.
This fresh and gourmet wine will sublimate a beautiful prime rib Angus or, for the most cooks, a hare stew with prunes.
