7 Crus is Pascal Agrapart's first gourmet wine. It is made from grapes from the 7 crus of the estate, including 4 Grands Crus and 2 Premiers Crus, and is composed of 90% of Chardonnay and 10% of Pinot Noir from 2 vintages cultivated in biodynamic agriculture. The grapes are harvested by hand, pressed and then fermented using indigenous yeasts in vats, followed by full malolactic fermentation. The wine is aged quietly on its lees for 20 to 32 months with manual stirring and then disgorged for 60 days before release.
7 Crus d'Agrapart represents greediness with brioche and toasted notes. On the palate, the bubbles are lively, with great finesse, an elegant cuvée combining delicacy and freshness. A great introduction to the incredible wines of this great biodynamist.
This cuvée has the necessary freshness to be drunk on its own as an aperitif, while having a nice structure to accompany a meal.
Domaine Agrapart has been harvester-manipulant (no purchase of grapes) for 4 generations, it is located in Avize in the Côte des Blancs. Today the vineyard extends over 12 hectares spread over Grands Crus and Premiers Crus, where Chardonnay and a few Pinot Noir are grown for the most part.
Domaine Agrapart is a reference in Champagne for its principles of organic viticulture, which consist in rebuilding the natural capital of the soils, preserving the health of the vines and promoting the authentic expression of their terroirs.
