Château Dauphiné Rondillon's 2011 Loupiac is made from 70% of Semillon and 30% of Sauvignon Blanc aged over 45 years. The grapes are harvested by successive selections (up to 5 selections) by hand in order to select only the bunches affected by Botrytis cinerea.

The grapes are then pressed whole without crushing. The juice is settled before being put into barrels where the alcoholic fermentation takes place, while controlling the temperature, until it stops naturally.

The wine is then racked, mutated and reentered for its maturation of about 12 months in vats. It is then bottled according to high specifications and will remain in the cellar for a minimum of 1 year before being sold.

This Loupiac 2011 comes from one of the best sweet vintages of the last 15 years. It has a beautiful golden colour, a powerful nose of apricots and jammy white fruits and a beautiful aromatic purity.

The palate is full and rich with notes of apricot, peach and pear. With strength and finesse, the aromatic power finds grace with an elegant finish full of vitality brought by a very fair acidity.

Sandrine once recommended that we try her Loupiac with spicy dishes and gave us a taste of it with wasabi peas, and her pairing was very good! You can also enjoy it with very mature cheeses or blue cheeses. Beware of saturating your taste buds if you pair it with foie gras!
