Les Acacias 2020 de Fabien Jouves

est l’un des vins de terroirs de Fabien issus d’une sélection parcellaire de Malbec de 40 ans élevés sur sols de calcaire ferrugineux perchés à 350m d’altitude.

Vendanges manuelles, égrappage, cuvaison de 30 jours, fermentation en cuves béton puis élevage en foudres pendant 18 mois sans aucun intrant ni sulfite ajouté.

Le Malbec cadurcien est sublimé ici par Fabien avec cet élevage ultra maitrisé, venant accompagner la puissance des fruits noirs du Malbec et lui apporter de l’onctuosité.

Coming from an old peasant family, Fabien Jouves started his career as an oenologist in the Bordeaux vineyards.

It was only in 2006 that he took over the family estate to make Mas Del Périé, 15 hectares of vines that he quickly led to biodynamic viticulture.

The young winegrower has a choice terroir, as the vineyard is located on the highest slopes of Cahors (382m altitude).

Fabien Jouves gives his time to the land, and shows us that it is possible to make fresh wines in a warm climate.

The vinification of the grapes is done naturally, no oenological input is added, the wines evolve quietly in vats, tuns or barrels according to their personality.
